My husband made these cookies tonight and they were so good, I had to share them with you!
This is a very simple recipe for anyone who’s wants to try a cookie with a uniquely sweet taste. Don’t let the hard to chew goji berries scare you; they get nice and mushy when baked. These are the soft, chewy, and original cousins of your traditional raisin cookie.

• 1/2 cup(s) of Earth Balance vegan buttery sticks • 3/4 cup(s) of organic pure cane sugar •1 tsp. of vanilla extract •1 1/4 cup(s) of flour (I used a mix of whole wheat and unbleached) • 1/2 tsp. of baking soda • 1/2 tsp. of baking powder • 1/4 tsp. of salt • 1/2 cup(s) of shredded coconut • 3/4 cup(s) of himalayan dried goji berries (or raisins, dried cranberries, etc) • 1/4 cup(s) of applesauce
Steps 1.Preheat your oven to 350 F (177 C) 2.Blend together the applesauce (or your choice of egg replacer), Earth Balance, sugar, and vanilla extract with a handheld blender until mixed evenly 3.In a separate bowl, mix together the flour, baking powder, baking soda, salt, coconut, and goji berries. 4.Add your Earth Balance, sugar, etc. mixture to the dry ingredients. Mix together. 5.Roll cookie batter into 1 1/2 inch balls and place on parchment paper on a cookie sheet (you may need more than one cookie sheet) 6.Bake for 12-15 minutes or until golden brown.
